Blend Concept: "Bitterness and Sweetness"

Bitterness and sweetness are opposing flavors, but both can be perceived in a cup of coffee.
Perhaps "sweetness within bitterness" is the best way to describe it.
We aim to recreate the taste of the most delicious caffe latte (a blend of espresso and milk) we remember, creating a coffee that is exquisitely blended, taking into account the unique characteristics of the green beans.
Dark Roast Coffee

The characteristics of dark roast coffee are "richness" and "sweetness."
Gram Blend has a particularly deep roast among dark roast coffees, resulting in a rich flavor.
It offers a strong richness, a sweetness within that richness, and an exceptional increase in sweetness when combined with milk.

Espresso and Coffee

Espresso is a method of extracting coffee, and as its name suggests, it means to "express" (fast) by "pressing" (applying pressure). *There are various theories.
To brew espresso, a dedicated espresso machine is required. Gram Blend is formulated to brew the best possible espresso. The best espresso is characterized by three distinct layers: "crema," "body," and "heart," extracted beautifully.
The caffe lattes served in our cafe space use this Gram Blend, and we are proud that it is a blend that even professionals can appreciate.
By striving for the best commercial espresso, we aim to evolve the home coffee-with-milk experience to be even more delicious. We also perform quality checks to ensure it can be enjoyed at home with a paper drip.
Changes in Aroma During Roasting

From the start to the end of roasting, the aroma of the coffee beans changes moment by moment.
There are several critical points of change, and missing these points can significantly impact quality.
To ensure we can always perceive these aromas, we meticulously manage our physical condition, avoiding strong-smelling foods (such as onions and garlic) as a roaster, and strive for daily quality control by paying attention to these minimum requirements.
Quality Control

At Base Coffee, we perform a quality check after every roast.
Especially during seasonal changes, it is essential to review the roasting process due to fluctuations in temperature and humidity.
The quality check that allows us to perceive these changes is "cupping."
By repeatedly performing this steady process of cupping daily, noticing subtle changes in taste, and feeding that information back into the roasting process, we believe we can consistently deliver stable quality.
