Our Store Opening Story (Store 1.5)
Good morning.
I'm writing about my business's opening story for no particular reason, but please bear with me if you have time.
Gradually, since opening, the business became stable, and customers started coming. Since many customers came for the cafe, we gradually increased the number of seats.
At opening: 6 seats → Around 1 year later: about 14 seats
*The wall is still there.
We had the very welcome situation of being fully booked on weekends.
We also accelerated our participation in outdoor markets, traveling to Tokyo and Mie, and regularly participating in the Sunday Building Market in Gifu. We were all-out (and still are!).
*This was only a bean stand. We weren't serving drip coffee.
Then, a tenant space next to our shop became vacant. After much deliberation, we decided to expand the shop and operate with two units in February 2017. This was about three years after opening.
*It was almost completely dismantled to the bare bones, and gradually started taking shape.
The original shop had only one table and was mostly high chairs, so it wasn't a very accommodating place. So, for the expansion space, we designed it to be as spacious as possible, easy for strollers to pass through, and a place where people could relax comfortably.
At this time, we received a lot of cooperation in building the shop, and a shop rich in wood was completed.
*The single-slab table is the best!
I have no talent, but thanks to my wonderful staff, we are able to offer the best lunch and desserts.
*Deli was prepared in small batches.
